Fish is one of our absolute favorites and especially in Puglia. In Puglia all fish is eaten raw out of the ocean - litterally - and it is called crudo. We love it. But we also love to cook any kind of fish with capers, olives, garlic, rosemary, tomatoes, chili, any greens. And offcourse rich amounts of olive oil and white wine. Cook for 20 min at 190 degrees.
