"We recommend the Monocultivar Extra Virgin Carrassa, which is a beautiful intense limpid golden yellow colour with slight green hues. Its aroma is fina and delicate, with vegetal hints of artichose and wild chicory, together with notes of aromatic herbs, especially mint and rosemary. Its taste is mellow and harmonic enriched with a flavour of celery and lettuce. Bitterness and pungency are present and well balanced, with an almond finish. It would be ideal on tomato appetizers, farro salads, marinated gilthead, grilled potatoes, barley puree, pasta with mussels, stewed shrimps, barbecued cuttlefish, roast rabbit, grilled poultry, mozarella cheese"

CHARACTERISTICS

Fruity: Medium-intense.

Aroma: Elegant and expansive, characterised by the scent of olives and cut grass, as well as hints of artichokes and green almonds.

Flavour: Sweet upon initial impact, it then reveals a decisive but contained bitterness and an intense, persistent hint of pepper, as well as tickling the taste buds with a persistent sensation of vitality.

We ourselves finds it amazing with almost all dishes that has a rich amount of flavour. We love it in all kind of fish dishes, Baccala, grilled meat and grilled vegetables, on buratta, straciatelle, bread, on vanilla icecream.
